The authentic dishes of Dalmatian Zagora include uštipak (a type of fried dough) served with kajmak (a type of soft cheese), cheese from tub and goatskin, home-made prosciutto, koštradina and raštika (a type of kale), frogs with prosciutto, snails, eel and frog brudet (similar to a stew), veal and lamb under sač (a special iron lid designed for baking), and many more.
